Chicago has rules about hot dogs, and this sauce breaks all of them on a technicality. In Chicago, ketchup is considered the condiment of the cowardly, but this isn;t a normal ketchup. Chicago would consider this a ketchup the way your uncle calls malort a breakfast liqueur: with a straight face and zero apologies. This mustardy beast rolls in past the bleachers, and straight into condiment ledgend. No tomatoes. No surrender. This is the kind of chicago ketchup you'd find under an old style sign, next to a cash-only register, while somebody argues whether Ditka could dbeat a hurricane in combat. Beeer mustard brings the barstool depth, vinegar keeps it snappy, and pickles add that proper crunch. It's loud, weird, and weirdly perfect, like arguing about baseball in February while standing outside in ten-degree wind wearing shorts. Irish Spike's Chicago style hot dog ketchup is not here to make friends. It is here to make memories, preferably near a freakin' grill.
