Everyone knows the British Empire occupied much of India for centuries, actively absorbing its flavors into English cuisine. What history often forgets is that the French held their own outpost in Chandannagar, West Bengal, for nearly three hundred years, yet chose to dismiss the region's profound spice culture in favor of rigid European traditions. Tiger's Breath is Spike's culinary revisionist history, re-imagining the bold alliance that should have happened. We fused classical french Dijon with pungent Black Mustard, Nigella Seeds, and Fennel Pollen, wrapped in vivid artwork of a radiant Bengal tiger bu Colombian artist Natalia Rangel. This is the uncompromising centuries-overdue marriage of two iconic flavor worlds.
